Black Label
Concept Black Label is based on extended ageing under cork for at least 12 months. During this time, the sparkling wine gradually refines its aromatic profile and develops a more pronounced gastronomic character. It is an authentic expression of the passage of time, patience and the longevity of sparkling wines from DOLENJSKA.
Ageing under cork allows the wine to develop its full flavour potential and achieve a complete aromatic expression. Through the Black Label project, we wanted to explore the influence of time on grape varieties and observe how their character evolves during maturation. The results were such a pleasant surprise that we decided to release the wine under the special Black Label designation.
Tasting notes
A delicate lemon colour with fine, fairly persistent bubbles. The bouquet shows some maturity, with notes of bread crust, toasted hazelnuts and ripe yellow fruit. The palate is similarly complex, revealing lemon, butter and hints of developing tertiary notes reminiscent of mushrooms. An excellent sparkling wine that at times recalls those from the world’s most renowned sparkling wine region. The finish is marked by a distinct note of bread crust.
Serving suggestions
Brut Réserve Black Label remains an excellent aperitif. It also pairs perfectly with shellfish, crustaceans and sushi.
