Black Label
Concept Black Label is based on extended ageing under cork for at least 12 months. During this time, the sparkling wine gradually refines its aromatic profile and develops a more pronounced gastronomic character. It is an authentic expression of the passage of time, patience and the longevity of sparkling wines from DOLENJSKA.
Ageing under cork allows the wine to develop its full flavour potential and achieve a complete aromatic expression. Through the Black Label project, we wanted to explore the influence of time on grape varieties and observe how their character evolves during maturation. The results were such a pleasant surprise that we decided to release the wine under the special Black Label designation.
Tasting notes
Brut Nature ŽČ has a delicate lemon colour and very fine bubbles. The bouquet is intense and diverse, showing maturity and a fine array of subtle tertiary notes. Butter, undergrowth, mushrooms, oak and peeled apple intertwine in an inviting aromatic profile. Dry, with high acidity and a lean, “vertical” structure. Despite its elegance, the palate is full-flavoured, intense, complex and persistent.
Serving suggestions
The sharpness of this cuvée pairs beautifully with the iodine notes of seafood such as sea urchins and oysters, where the sparkling wine acts almost as a seasoning. It has enough presence to accompany sushi or sashimi, and even pairs well with truffle pasta.
