In winemaking jargon, “tirage” means bottling: the moment when we pour our best blends into bottles to carry out the second alcoholic fermentation. Time then does its work on these still young and raw materials.
The Tirage collection is the expression of time flowing through a rigorous selection of the best base wines of our house. All of them stand out for their taste qualities combining elegance and power, but above all for their potential to flourish in the hands of the sculptor time.
The base wines of T2017 come exclusively from the heart of the cuvée and give pride of place to Zametna crnina, Chardonnay and Pinot Noir from our own vineyards. T2017 ages 106 months in our cellars, then rests 6 months after disgorging before finally reaching your tables.
Tasting notes
The delicate chiseled nose opens with aromas of spoon biscuit, grapefruit, orange peel and almond. In the mouth, the effervescence immediately melts into the body of the wine. We then perceive a more exotic character in retro-olfaction, with passion fruit, pineapple and lime. It is at this precise moment that the physical presence of the wine takes over, carried by its crisp acidity which dissipates with shale minerality and aromas of honey and brioche with candied fruit.
Serving suggestions
This is a prestigious, elegant, and powerful cuvée that is sufficient in itself to be shared in special moments. However, epicureans can pair it perfectly with caviar, fish tartare or sesame chicken.
